What a pleasure to do a Healthy Eating spot during the lunch break for a group of young fathers who were students in a Transformational Thinking Course. It couldn’t have been more timely as their conversations for three weeks had been featured on a different way of looking at things. So why not look at what they feed their bodies as well? I brought ingredients so they could prepare their own salad bowls. Romaine lettuce, shredded carrots, black beans, brown rice, cucumbers, tomatoes, avocados, tofu strips and several natural dressings were included. When I said that I had prepared tofu as part of the salad, some of them groaned and commented, “I don’t like that.” Others were either familiar with it or curious and up for the tasting. One young man said it tasted like chicken. It was a delight to answer their questions about the dish, share about making healthy choices and watch their bravery in trying new foods. They emptied the bowl and while I do know they were hungry, they enjoyed it! I’m already thinking about the next time.
